Montego Bay’s feistier cousin, Jamaican Blend has a base note of Sweet Paprika. She may have some West Indian fire in her belly, but with some Brown Sugar, she can be just as sweet if she wants to.



Baked Jamaican Chicken 

Take 4 chicken quarters, place in a bag with diced pineapple and a tablespoon of Cornish Spice Man Jamaican blend.  Shake it up and leave for at least four hours to marinate.

Pre heat the oven to 200 degrees centigrade (Gas Mark 6).

Place chicken in a casserole dish and bake in the oven for 30mins, covering in foil so as not to lose the juices

Coconut, Lemon Rice & Peas (accompaniment for the chicken)

Boil rice in mixture of half coconut milk, half water. When tender strain rice and stir in a cupful of peas.  Add salt, pepper and fresh lemon zest. Blend together and cover. Keep warm until chicken is ready to remove from the oven.  

Serve rice on a bed of fresh spinach, place the chicken on the rice and drizzle over pineapple pieces and juice.
